My name is Olive Boncoeur. I am the mother of Ghaelle and the president of "Femmes Agricultrices of Nouvelle-Découverte" which is an association to empower the local women in agriculture, our organization has been invited to prepare local dishes during the Maize Festival at Anse Fémie in Gravier.
We are going to prepare various dishes of maize (details are still a secret !!!) , curries, cakes and local drinks.
The maize dishes will be accompanied by:
Octopus Curry, Octopus Salad, Fish Curry, Fish Salad, Fish cooked in Creole Sauce, Porc Curry, Chicken Curry, Chutney of Coconut, Chutney of grilled Bringel (egg plant/aubergines), Chutney of grilled Tomatoes
Drinks - as local juices:
Lemon Juice, Tamarind Juice, Passion Fruit Juice
As infusion:
Local Coffee, Citronelle Infusion, Basilic Infusion
As cakes:
Sweet Potatoe Cake, Casava Cake (manioc), Maize Flavour Cake
We all hope that the weather will be fine, we are expecting about 5000 people, so cooking will be hard and we are going to start with it there already at 6 o'clock in the morning, only the cakes, and some juice can be prepared in advance.
